'Red honey' indicates the amount of turning the cherry receives before being completely hulled -- red is turned a few times a day. This processing method provides bright flavors to come through.
We taste dried mango, red wine, and an orange bitterness. Since this coffee has a perceived sweetness, there are multiple layers to this coffee. First, the dried mango provides a "drying" effect in the mouth, reminiscent of eating dried mango. Second, the lingering effect of the orange bitterness reminds us of orange juice.
