This coffee is quite interesting and we found that the flavors definitely developed as we off-roasted this one. Similarly to our previous PNG, these PNG beans also have a very sweet and floral smell. However, the cup is far from floral -- right off the brew, we get notes of cocoa and nougat with a slight nuttiness. As this coffee cools, brighter notes come through -- think pear and lemon rind, which leaves a slight 'dryness' on the palette. Once this coffee is cooled off completely, a slight herbal mintiness is present, reminscent of sarsaparilla.If you like First Flight, you will certainly like the PNG, as the coffee development from brew --> cooled are very similar. 


'AA' indicates the size of the bean. At washing stations, green beans are sorted through various screen sizes, in which the large beans remain on top, whereas the small/chipped/broken beans are sifted through. 'AA' represents the largest of the beans. The size of a coffee bean can occur due to multiple factors, including the variety of coffee within the Arabica species or the amount of nutrients the bean obtained while in the coffee cherry. This particular PNG contains a multitude of coffee varieties, including Arusha, Blue Mountain, Catimor, Caturra, Mundo Novo, and Typica.
