We wanted to provide a fruit-bomb and explored different origins that we knew would be unique for our customers. We arrived at 4 different coffees from El Salvador that were all outstanding on the cupping table. This particular natural processed El Salvador stood out among the rest -- the "best of the best", so to speak.
Flavor Notes:
This coffee is the perfect balance of fruit- and floral-forward flavor notes. At the cupping table, immediate cooked fruit aromas emanated from the cup. On first sip, we noted a berry-forward taste to this coffee. Think raspberry and strawberry. A honey-like sweetness mixed with a perfume fragrance, predominantly jasmine, provides a unique balance to this coffee.
An underlying tone of cocoa nib is present in this coffee as well. The combination of the overall fruit and floral aspects mixed with the chocolate undertones provide a stunning complexity to this coffee. The body of the coffee is medium with a medium acidity level and a medium-high sweetness level.
Due to its complexity, this coffee performs very well through espresso. We highly recommend using this for smaller espresso beverages so that the delicate fruit and floral notes shine. We tried this as a 6oz cappuccino, 8oz americano, and a cortado (4oz), using the standard 1:2 ratio for each. All three were super tasty!!
If you are brewing this coffee for filter or full immersion, we recommend a 1:15 ratio to bring out the fruitiness. As the coffee cools, fruit aspects slightly diminish, and the floral and cocoa nib undertones maintain their consistency.
