It's been a while since we sourced a fruit bomb. We took it easy over the winter to bring coffees with more mellow profiles. We knew spring would be the perfect time to bring back something crazier for you all.
For that, we sourced this natural processed coffee from Finca San Cristobal. This microlot produces exceptional coffees, and we were excited when we tried this one on the cupping table.
Flavor Notes:
On first sip, we taste a very fruit-forward coffee. Its bright aspects reminded us of berries (including raspberry) and pomegranate. These flavors are transformative as the coffee cools -- you'll find that these fruited notes develop even further.
As a Costa Rican coffee, this has much complexity -- the common thread through the coffee is a chocolate aspect, think cocoa nib. This coffee also possess a relatively bright acidity level -- brighter than a typical natural.
We roasted this light to draw out its natural fruit flavors and high perceived sweetness.
