Selection:

In pursuit to refine and enhance our blends, we often sample new components from various green coffee importers. While sourcing coffees to elevate our Abstraction blend, we came across a few tasty washed Ethiopian coffees. This particular coffee stood out among the 6 that were sampled due to its interesting flavor characteristics, and we decided that this coffee was a great choice to use as a single origin in our rotating single origin list.

 

Flavor Notes:

At the cupping table, we tasted delicate, fruity notes with a medium perceived sweetness level and a medium acidity level. On first sip, you'll notice a distinct blueberry note and a florality, reminiscent of jasmine. This coffee also possesses a softness throughout as the coffee cools -- this aspect mixed with fruity transformative flavors creates a soft white peach note. 

 

As with most washed Ethiopians, this coffee has a lighter body and it excels in brewing methods that enhance its clarity. Due to its soft, delicate features it does well as a pourover and performs well through espresso.

 

Barista Notes:

We recommend the standard 1:16 ratio for filter methods. We have found that this coffee is well-balanced with a brew time of 3:30 for pourovers. To create a "punchier" fruity flavor, consider speeding up the brew time to 2:45-3:00.

 

For espresso, a 1:2 ratio should yield good results. Since this is a coffee with delicate flavor characteristics, milk drinks exceeding 10oz are not recommended (i.e. lattes). We recommend utilizing this strictly for cortados, cappuccinos, and small americanos (~6oz of water).
